Real estate group Pichet, lifestyle hospitality company Ennismore, and designer Philippe Starck collaborate to open new hotel in Bordeaux – Mondrian Bordeaux Les Carmes, a five-star hotel in Bordeaux’s Chartrons district.

In a collaboration between real estate group Pichet, lifestyle hospitality company Ennismore, and renowned designer Philippe Starck, Mondrian Bordeaux Les Carmes has opened its doors in the heart of Bordeaux’s historic Chartrons district. This five-star hotel, consisting of 97 rooms and suites, a Morimoto restaurant and bar, a spa, and conference facilities, marks Hyatt’s entry into Bordeaux, one of the most attractive tourist destinations globally.

Built-in 1871 as the Hanappier and Calvet winery, the historic building underwent extensive renovations by Philippe Starck to create a sophisticated and unique space. The hotel pays homage to Bordeaux’s rich wine history, evident in its architectural details and the influence of Japanese aesthetics. The building’s restoration blends modernity with historical elements, showcasing Bordeaux’s connection to the wine trade and its neo-Gothic heritage.

The 97 rooms and suites, designed by Philippe Starck, offer an intimate and harmonious ambiance, with a focus on natural materials and earthy colors. Several rooms feature private terraces adorned with greenery, providing a tranquil retreat for guests. The hotel also boasts a Morimoto restaurant, offering Japanese-inspired cuisine by Chef Masaharu Morimoto.

Mondrian Bordeaux Les Carmes adds to Hyatt’s brand growth in Spain, with a portfolio spanning 11 different brands. This expansion aligns with Hyatt’s strategy to establish a presence in sought-after destinations in Europe, Africa, and the Middle East. The Mondrian brand, known for its celebration of local culture and sophisticated design, continues to be a key player in Hyatt’s growth plans.

The hotel’s spa and wellness center feature a swimming pool, sauna, hammam, and fitness room, providing a holistic well-being experience. With its elegant meeting spaces, the hotel caters to corporate events and private functions, offering flexibility in configuration and state-of-the-art technology.

The Morimoto restaurant, a Bordeaux-exclusive dining experience, presents Chef Masaharu Morimoto’s innovative Japanese cuisine. Philippe Starck’s design vision for the restaurant blends East and West, creating a cosmopolitan space that transports guests to an invented elsewhere.

Mondrian Bordeaux Les Carmes stands as a testament to Bordeaux’s cultural richness, combining history, luxury, and hospitality. As a valuable addition to Hyatt’s portfolio, this new Mondrian property reinforces Hyatt’s commitment to providing unique and meaningful travel experiences in iconic destinations.
