MICHELIN Guide Expands to Cappadocia

The MICHELIN Guide is taking a monumental step in Türkiye by expanding its prestigious restaurant selection to Cappadocia, a region long celebrated for its ancient landscapes and now recognized for its emerging culinary excellence. The first-ever MICHELIN Guide selection for Cappadocia will be unveiled on December 4, 2025, at a ceremony in Istanbul’s iconic Four Seasons Hotel Bosphorus, alongside updated selections for İstanbul, İzmir, and Muğla.

With its roots deep in Anatolian food traditions, Cappadocia’s gastronomy is a feast of texture, technique, and terroir. From stylish fine-dining establishments to cozy eateries tucked into cave dwellings, the region offers flavors as unforgettable as its scenery. Think tender Tandır-cooked meats, fermented delicacies, steaming local soups, colorful mezzes, and the region’s iconic sealed clay pot dishes.

A Region Where Taste Meets Timelessness

Located in Central Anatolia, Cappadocia is not only a culinary revelation—it’s one of Türkiye’s most photographed and awe-inspiring destinations. Famous for its surreal volcanic landscapes, hot-air balloon sunrises, and UNESCO-listed rock-cut architecture, the region draws millions of visitors each year. Now, with the MICHELIN spotlight shining on its kitchens, Cappadocia is set to attract even more global attention.

“This expansion confirms Türkiye’s position as a vibrant, multifaceted gastronomic destination,” MICHELIN’s representatives stated. Since launching the MICHELIN Guide İstanbul in 2022, and expanding to İzmir and Muğla in 2023, the guide has showcased the depth and range of Turkish cuisine. Adding Cappadocia further emphasizes the country’s rich culinary geography.

A Global Standard Applied Locally

Just like in Paris, Tokyo, or New York, MICHELIN’s anonymous inspectors will evaluate Cappadocia’s restaurants based on five key universal criteria:

  • Quality of ingredients

  • Mastery of cooking techniques

  • Harmony of flavors

  • Personality of the chef in the cuisine

  • Consistency across the menu and over time

With this rigorous standard, the MICHELIN Guide ensures global credibility, whether a restaurant is hidden among Cappadocia’s fairy chimneys or nestled in an Istanbul neighborhood.
