Fairmont Cheshire, The Mere Opens Following £125 Million Transformation

Fairmont Hotels & Resorts has expanded its presence in the United Kingdom with the opening of Fairmont Cheshire, The Mere, a luxury countryside resort following a £125 million transformation. The property becomes the brand’s fourth hotel in the UK, joining The Savoy, A Fairmont Hotel, Fairmont Windsor Park and Fairmont St Andrews.

Located on a 157-acre estate overlooking The Mere Lake near Knutsford, Cheshire, the resort has been extensively redeveloped to combine Fairmont’s luxury hospitality with the character of the historic estate. Interiors were designed by Bergman Design House, blending contemporary elegance with locally inspired craftsmanship and materials.

Luxury Accommodation in the Cheshire Countryside

Fairmont Cheshire, The Mere offers 116 guest rooms, including 23 suites, providing a refined countryside retreat within easy reach of Manchester, the Peak District and the market town of Knutsford.

The redesign incorporates natural stone, handcrafted tiles, timber veneers, Japanese lacquer and bespoke finishes throughout the property, creating a contemporary interpretation of British country-house luxury.

Gordon Ramsay Brings Signature Dining

One of the resort’s highlights is Gordon Ramsay at The Mere, the celebrity chef’s new restaurant in Cheshire. The restaurant serves refined British cuisine, including Gordon Ramsay’s signature Beef Wellington, alongside seasonal dishes inspired by local produce.

Additional dining venues include The Orangery, which serves traditional afternoon tea before transforming into a champagne and oyster bar in the evening, and The Club Lounge, offering an international menu with Indian-inspired influences. Guests can also enjoy premium cocktails in a speakeasy-style bar overlooking the lake.

Luxury Spa and Championship Golf

The Fairmont Spa occupies a restored Victorian stable block and features a 20-metre indoor swimming pool, Finnish barrel sauna, hammam steam rooms, salt inhalation chambers, ice baths and six treatment rooms.

The wellness offering includes treatments from Wildsmith Skin, KAMA Ayurveda and 111Skin, while fitness facilities include a Technogym, outdoor exercise studio and dedicated spa café.

Golf enthusiasts can also enjoy the estate’s championship 18-hole parkland course, originally designed in the 1930s by renowned golfers James Braid and George Duncan and considered one of the region’s leading golfing venues.

Events and Celebrations

The resort is equipped to host conferences, weddings and large-scale events. Its Grand Ballroom spans 1,000 square metres and can accommodate up to 1,000 guests, while additional boardrooms provide flexible meeting and private dining spaces with views across the surrounding parkland.

The opening reflects Fairmont Hotels & Resorts’ continued global expansion and further strengthens Cheshire’s position as a luxury leisure destination, combining high-end accommodation, fine dining, wellness and outdoor experiences within one of northwest England’s most scenic countryside settings.
