Gordon Ramsay to Open Signature Restaurant at New Fairmont Cheshire Resort

Celebrity chef Gordon Ramsay is expanding his UK restaurant empire with a new dining concept set to open at the redeveloped The Mere Golf Resort & Spa following a £60 million transformation of the property.

The restaurant, called “Gordon Ramsay at The Mere”, will become the signature dining venue at the hotel once it completes its rebrand as Fairmont Cheshire, The Mere.

The project forms part of a major redevelopment of the 157-acre estate, which will reposition the property as one of the most luxurious resorts in northwest England.

The restaurant will be operated by Gordon Ramsay Restaurants, the global hospitality group founded by Ramsay in 1998. The company now runs more than 30 restaurants in the United Kingdom and more than 60 worldwide, with locations spanning North America, Europe and Asia.

A growing partnership with Fairmont

The new restaurant also strengthens Ramsay’s relationship with Fairmont Hotels & Resorts.

The chef already oversees several high-profile dining venues at The Savoy Hotel, including the iconic Savoy Grill, River Restaurant by Gordon Ramsay and the Michelin-starred Restaurant 1890 by Gordon Ramsay.

A spokesperson for Gordon Ramsay Restaurants said the new partnership comes at a pivotal moment for the historic Cheshire property, which is undergoing a large-scale refurbishment and expansion.

The redevelopment includes redesigned guest rooms, upgraded public spaces and wellness facilities, and an expanded focus on high-end dining. The aim is to elevate the resort into a major luxury destination while preserving its long-established character.

Luxury resort transformation underway

The Mere was acquired in 2022 by Dubai-based developer Select Group, which partnered with Fairmont in 2023 to carry out the multimillion-pound redevelopment.

Once completed, the resort will expand from 81 bedrooms to 116 rooms, including 27 suites. The property’s existing 18-hole championship golf course will remain a centerpiece of the estate, while wellness amenities and food-and-beverage offerings will be significantly upgraded.

Fairmont has indicated that the newly branded Fairmont Cheshire, The Mere is expected to open in late 2026. The property will become the fifth UK hotel for the brand as it continues expanding its luxury footprint across the country.

Ramsay’s restaurant group currently holds nine Michelin stars across its portfolio, reinforcing the chef’s continued influence in the global fine dining scene.
