NH Collection Maldives Reethi Resort has unveiled a new immersive fine dining concept called Caravela, combining storytelling, historical exploration and global gastronomy within the UNESCO-protected Baa Atoll.
The experience blends Spanish culinary traditions with Maldivian ingredients, drawing inspiration from the maritime expeditions that reshaped global trade and cuisine during the Age of Discovery.
New Culinary Concept Inspired By Historic Voyages
Caravela takes its name from the Portuguese caravels that enabled major exploration routes between the 14th and 17th centuries.
The dinner-only concept is designed for a maximum of 12 guests and centres around a communal dining table intended to encourage interaction and shared experiences.
The inaugural menu, titled “The Atlantic Voyage of 1487,” follows the route of early explorers sailing from the Iberian Peninsula along the African coastline toward the Cape of Storms in search of a sea route to India.
Five-Course Menu Reflects Historical Journey
The culinary experience begins with King Crab fritters served with ikura and lime-yuzu vinaigrette before continuing with torched Maldivian tuna loin paired with escabeche and Moroccan-inspired spices.
Additional courses include locally sourced job fish with confit plantain purée and prawn coral tuile, followed by a green apple sorbet inspired by African produce historically encountered during maritime expeditions.
The main course features 12-hour sous vide pork belly glazed with smoky chilli and Spanish chorizo jus.
Dessert concludes the experience with olive oil cake, port wine and blood orange gel presented inside a sugar sphere inspired by the Portuguese Armillary Sphere navigation symbol.
Future Menus Will Explore Other Historic Routes
NH Collection Maldives said the concept will evolve with future themed tasting menus inspired by other major exploration routes.
Planned future editions include “The Pacific Voyage of 1492” and “The Indian Ocean Voyage of 1498.”
Each menu will introduce different regional ingredients and culinary influences linked to the historical routes being explored.
Luxury Hospitality Increasingly Focuses On Storytelling
The concept was developed under the direction of Resort Manager Melroy Fernandes in collaboration with the resort’s culinary and sommelier teams.
Fernandes said the experience was designed to connect travellers with history, culture and cuisine in a more immersive and meaningful way.
The launch reflects a growing trend in luxury hospitality toward experiential dining concepts that combine gastronomy with storytelling, culture and destination identity.
NH Collection Maldives Expands Premium Dining Portfolio
Caravela joins the resort’s broader dining collection, which includes several restaurants, bars and destination dining concepts across the island property.
The Atlantic Voyage tasting menu, including wine pairings, is priced at USD 190++ per guest and is available through advance reservation.
