This July, Bar Stravinskij at Hotel de Russie in Rome introduces a striking new cocktail menu, a masterful collaboration between legendary mixologist Salvatore Calabrese, known as The Maestro, and Resident Bar Manager Mattia Capezzuoli. Drawing inspiration from classical music, the lush hotel garden, and the creative legacy of composer Igor Stravinskij—after whom the bar is named—the collection is a poetic fusion of nature, artistry, and liquid craftsmanship.
The new menu, comprising 15 original creations including four mocktails, is a sensory ode to the artistic souls who once graced Via del Babuino. Each drink tells a story—through ingredients, composition, and presentation—while five of the cocktails pay homage to Calabrese’s own legendary career.

STRAVINSKIJ SIGNATURE COCKTAIL
If nature had a melody, this would be the taste. Sparkling wine, wild berries, saffron, citrus, passion fruit, and spice blend into a drink as harmonious as a sonata.
RED ECLIPSE
A bold reimagination of the classic Negroni with layers of bitterness and smoke. Mezcal meets Campari, vermouth, cacao liqueur, and vodka for an intense, velvet-finished pour.
GARDEN SYMPHONY
A nuanced milk punch with notes of coffee, pineapple, and vanilla. Both elegant and exotic, it delivers a warm finish with a bittersweet edge.
BEE SPICY
Tequila and mezcal create a smoky base, accented with honey and chili for a vibrant, fiery finale—like a dance of bees among blooming flowers.
AFTERNOON TEA
A bold twist on the British tradition, this cocktail blends rye, Scotch, Oloroso sherry, oolong soda, Fernet, and liquorice into a contemplative moment of calm.
FLORA
Evoking the essence of the hotel’s Secret Garden, this cocktail layers gin and mezcal with lavender and red fruit—botanical, floral, and beguiling.
