Gastrónoma 2025: The Mediterranean’s Biggest Culinary Event Returns to Valencia This October

Get ready for one of the most anticipated events on Spain’s culinary calendar. Gastrónoma 2025 returns to Feria València from October 26 to 28, bringing together chefs, artisans, producers, and food lovers for three days of innovation, flavour, and inspiration.

Celebrating its 10th edition, Gastrónoma will once again fill Halls 1 and 3 with cooking demonstrations, tastings, workshops, and discussions exploring the future of Mediterranean gastronomy — with a focus on local produce, young talent, and sustainable cuisine.

Tickets are now on sale for what promises to be the most dynamic edition yet. Whether you’re a hospitality professional, chef, producer, or passionate foodie, Gastrónoma is the place to learn, discover, and connect. Expect live showcookings, new products, and that unmistakable energy that makes this event a true celebration of food culture.

A Celebration of Valencian Flavours

This year, for the first time, Gastrónoma will feature the “València, Pantry of the Mediterranean” stand — a vibrant hub of tastings, workshops, and culinary experiences.

October 26 Highlights

  • Maison Lupin Cocktails (12:00–13:00) – A tribute to the Valencian orange with creative takes on the classic Agua de València and a Nino Bravo–inspired drink.

  • El Paeller (13:00–14:00) – Master rice chef Rafa Margós fires up traditional wood-cooked broths using seasonal vegetables from the local huerta.

  • València Hospitality School (14:00–15:00) – Students showcase an inventive figatell of squid with avocado, persimmon, and beetroot emulsion.

  • Urban Honey Workshop (15:00–16:00) – A tasting of urban honey from six neighbourhoods, highlighting the city’s biodiversity.

  • Pasqual + Sheila (16:00–17:00) – A live jam-making session using Valencian mandarins and oranges, vanilla, and sea salt — no preservatives, just pure craft.

  • PROAVA Wine Tasting (17:00–18:00) – A guided journey through Valencian wines and their native grape varieties.

October 27 Highlights

  • Chef Félix Chaqués (14:00–15:00) – A creative rice and food-pairing demonstration, blending flavours through shared aromatic compounds.

  • Bajoqueta Bar (15:00–16:00) – A live grill session celebrating the vegetables of Valencia’s huerta.

  • Café de las Horas (16:00–17:00) – Mixology returns with the authentic Agua de València from the bar that made it famous.

  • Pasqual + Sheila (17:00–18:00) – A dessert showcase and tasting featuring creations like Pistachio Cake and Sugar-Free Almond Cake with banana and strawberry.

October 28 Highlights

  • Portolito (12:00–13:00) – An autumn rice with roasted chestnuts, wild boar ragù, and chanterelles.

  • Ampar – Hospes Palau de la Mar (13:00–14:00) – Chef Carlos Julián demonstrates the art of seasonal, local sourcing.

  • Gastrotrinquet (14:00–15:00) – Pablo Margós presents root vegetable rice using produce from Mercavalència’s Tira de Contar farmers.

The Sweetest Competition: Spain’s Best Chocolatier

Gastrónoma will also host the MMACE (Campeonato al Mejor Maestro Artesano Chocolatero de España), where six of Spain’s top chocolatiers — including Mario Padial, Andrés Mármol, Luis Paracuellos, Isabel Felez, Albert Daví, and José Alba — will compete live, crafting stunning sculptures, bonbons, and artistic chocolate creations.
